Champagne Georges Laval has the oldest organically farmed vineyards in Champagne. They have been farming organically since the 1940’s and certified organic since the beginning of Ecocert in Champagne, in 1971. The winemaking is similar to Marguet in that everything is native yeast fermented in small barrels. There is very little sulfur used at the winery, and it is only added at the press. They have a small 2000 kilo basket press. It is a very small winery making 12-18k bottles/year. The Laval’s have just 2 hectares in the 1er village of Cumieres, but since 2018 (the current vintage release for Cumieres) they have had 5 full time workers for the 2 hectares. In Champagne, 1 worker for every 2 hectares is considered very good. The Laval’s have 5 times that. Having these extra workers allows the Laval’s to farm in a way that most others can’t. The attention to detail in the vineyard, and the handwork is really incredible. Having these extra hands makes it easier for them to protect agains’t problems in the vineyard without using chemicals, and the results are beautiful grapes that make extremely terroir driven wines that are balanced without dosage.
